Easy Make Fruit Sundaes
When it comes to summer desserts, give me easy-make every time, unless someone else is doing the cooking. And no-cook fruit sundaes are my perfect solution to a sweet tooth on a hot day. We really are not too precious on the ingredients either. We like to use shortbread biscuits and vanilla ice cream, smothered in squirty cream, so use this recipe as an idea not a rule, and get creative.
Makes 4 (or two if you are really into dessert)
Ingredients
- 500g punnet of strawberries* or of fruit of choice
- 2tbs caster sugar
- Pot of fresh whipped cream (or squirty if it suits)
- 8 shortbread biscuits (2 per glass)
- Chocolate sprinkles or shaved chocolate flakes
- 8 scoops of vanilla ice - cream (choose your own flavours)
- Ice cream syrup
Method
- Find four glasses - we use half pint tumblers for ease. You can buy dessert glasses or serve in a bowl. The presentaton counts if you are trying to impress, but we just want to satisfy a craving
- Wash, top and slice the strawberries then sprinkle with the sugar
- Divide equally into four portions and add half a portion to each glass
- Add half of a crumbled shortbread biscuit on top of the strawberries
- Add a scoop of ice cream
- Repeat the above steps with another layer of strawberries, biscuit and ice cream
- You can add ice cream syrup, or a strawberry sauce under each layer of ice cream. We use chocolate sauce!
- Once you have your stack, top with fresh cream - or squirty cream - and sprinkle with chocolate flakes
- Enjoy!
This really is one for everybody to make - it is so easy and you can play around with different flavours and layers. We can make it gluten- and lactose- free by buying the right biscuits and cream, so everybody gets to enjoy dessert in our house.
*you can use whatever fruit you like but red berries work well for us
