Cheesy Apple-tisers

Appetisers are a great start to dinner, especially if you are inviting friends and family over for a foodie get-together. With the weather moving away from intense sun and cooler nights arriving a little earlier, it is a great time to start thinking about autumn menus and winter stews. But for evening nibbles or movie treats, we love using in-season fruit, and apples are top of our September list.

For something no-bake and super-easy, we opt for cheesy apple biscuits. Selecting our favourite digestive biscuits, we simply top them with sliced cheese and apples. It couldn't be simpler. But for an interesting twist, use cream cheese spread to hold it together, or add some chopped walnuts and sandwich everything in between two biscuits.

This is a real throwback to the 80s, when cheese and apple on a biscuit became a trendy item, and it still works today as an evening snack, a lunchtime treat, or, fancied up, as a party appetiser with whipped cheese and walnuts.

For more options, you can use scones instead of biscuits. Warm the scones, slightly melting the cheese on top, before adding the apple.
Use cheese scones for more flavour.
Add a sprinkle of cinnamon and whipped cheese.
Chocolate Digestives to add a real flavour combination.

Ingredients

  1. Biscuits - sweet or savoury, the choice is yours. We prefer Digestives
  2. Sliced cheddar cheese
  3. Slice and core two apples

And that's it... Build your stack or biscuit sandwich any way you choose.
