Homemade Nibsy's Donuts
Finding vegan and gluten-free treats together is hard, as many outlets offer an either-or approach to free-from eating. So, when we visit Reading, we always head to Nibsy's because we know they can cater for both.
This last time, we bought a packet of their Donut Mix and decided to try making our own at home. Not having a doughnut mould for baking did not stop us, and after a few unsuccessful attempts to pipe around foil in a cupcake tray, we admitted defeat and made doughnut buns instead.
The mixing and preparation were relatively easy, and we combined the additional ingredients as instructed. Making them our way in a regular sponge tray meant we ended up with about 36 individual doughnut buns.
I would like to say we got adventurous and added filling or cream, but we simply ate them as they came out of the oven, while they were warm. The ones that did survive the cool-down were popped into an airtight container and were suitable to eat cold the next day.
If you want, you can use two larger cake tins, make a regular round doughnut cake and fill it like a sponge cake. Because the added ingredients include apple puree, these were already sweet and tasty enough for us.
