One Pot Pasta

This quick and easy recipe makes a family meal in minutes, and leaves more time to relax with limited washing up.

Enjoy with crusty warm bread and a healthy dusting of parmesan cheese.

Ingredients

  • 12 oz spaghetti (we use free-from)
  • 400g chopped tomatoes
  • 1 medium red onion - chopped
  • 4 cloves garlic
  • Pinch red chilli flakes
  • 2 teaspoons dried oregano leaves
  • 1 litre vegetable stock
  • 2 tablespoons extra virgin olive oil
  • Small bunch diced basil leaves
  • Parmesan cheese

Method

  1. Put pasta, tomatoes, onion and garlic in a large stock pit and pour on the stock. Sprinkle on the chilli flakes and oregano and drizzle with oil.
  2. Cover the pot and bring to the boil before reducing to a low simmer.
  3. Keep covered and cook for about 10 minutes until pasta is softened through, stirring every few minutes to separate and avoid clumping.
  4. Once the liquid has turned to a creamy sauce season to taste with salt and pepper before adding the basil leaves.
  5. Stir thoroughly and serve with warm crusty bread (gluten-free if preferred) and a topping of Parmesan cheese.
