"As a family, we have gone back to making time to cook together and eat our meals around the table of an evening, catching up on the day. This one pot meal means less washing up and more time together as a family."

  • 400g chopped tomatoes
  • 1 medium red onion - chopped
  • 4 cloves garlic
  • Pinch red chilli flakes
  • 2 teaspoons dried oregano leaves
  • 1 litre vegetable stock
  • 2 tablespoons extra virgin olive oil
  • Small bunch diced basil leaves
  • Parmesan cheese

  2. Cover the pot and bring to the boil before reducing to a low simmer.
  3. Keep covered and cook for about 10 minutes until pasta is softened through, stirring every few minutes to separate and avoid clumping.
  4. Once the liquid has turned to a creamy sauce season to taste with salt and pepper before adding the basil leaves.
  5. Stir thoroughly and serve with warm crusty bread (gluten-free if preferred) and a topping of Parmesan cheese.
